For some people, breakfast can be just another morning chore. There is nothing more deflating than a bland bowl of cereal in the morning so, for me, the key is to make breakfast something you’ll actually look forward to eating. Personally I can’t function properly (especially when I’m in classes) when I havn’t at least had something to drink in the mornings. Even better is when I’ve had a tasty and healthy breakfast that means I don’t get those mid-lecture stomach growls! I am very much a toast kind of girl so the two main recipes I’ve featured here are my favourite ones involving my preferred breakfast food.
Banana and Peanut Butter on Toast
This is a firm favourite with a few of my friends and so so easy to do on a rushed morning. I prefer to use crunchy peanut butter for this one, but if you only have smooth then that will do. Slice 1 banana and place the slices on top of wholemeal toast smothered in peanut butter. It’s as simple as that! If you wanted to really make this special you could use some unroasted, unsalted chopped peanuts or almonds to sprinkle on top. If you aren’t a toast person, then ad something a bit more interesting to your granola by using a few spoons of natural yoghurt, peanut butter and top with banana .
Eggs on Toast with Chilli and Lemon Avocado
I cook this recipe when I have a little more time in the mornings and the avocado is so perfect for keeping me full until lunchtime. Scoop out the flesh of 1 ripe avocado into a bowl and mash it with a fork, adding a few squeezes of lemon juice and a pinch of chilli flakes, salt and pepper. Set aside and cook the eggs, I cook two eggs in coconut oil and flip them over for a minute just to seal the top. Spread the avocado on toast and top with the eggs, salt and pepper and some fresh coriander if you have it. If you wanted to make this Mexican, then use a wrap instead of toast and fill it with the avocado (with lime juice instead of lemon) and some beans made with tomatoes, paprika, cumin and ground coriander.

Made a variation of this just now but just with cayenne pepper – did not have any chilli flakes or tomatoes. Still lush! Thanks for the ideas. ☺☺☺
