Three Great Salad Dressings

IMG_6845

When it comes to eating healthily, salads can be pretty uninspiring and bland.  So a good salad dressing can make all the difference and maybe even help you to make healthier choices! I’ve made three of my favourites, all different styles and flavours to go with a variety of salads. The fruity, zesty Asian dressing would taste amazing with a crunchy noodle, edamame and pepper salad; the honey mustard with iceberg lettuce and croutons and the classic dressing with soft baby leaves and herbs. If you’re interested in making salad dressings regularly, I would recommend getting a nice bottle of extra virgin olive oil, it really makes all the difference!

Sweet Honey Mustard Dressing

Take 2 teaspoons of mustard powder (I use Colman’s) and mix with a tablespoon of runny honey and cider vinegar using a fork. Beat in a pinch of sugar, salt and pepper and a tiny drizzle of extra virgin olive oil for some thickness. Taste and adjust to your liking!

Mix together a teaspoon of Yuzu Juice (I found this at Waitrose) with a tablespoon of light soy sauce and the juice of one lime. Add a splash of rice wine and a teaspoon of runny honey and mix with a fork. Finally add half a teaspoon each of crushed garlic and chilli flakes.

Mix together 1 tablespoon of extra virgin olive oil with a splash of balasmic vinegar and a dessert spoonful of white wine vinegar. Whisk together with a fork, adding plenty of salt and pepper and a pinch of sugar. Simple!
